I originally purchased this overpriced and poorly designed 12" sheeter for my small business, where I hand-make between 80 to 100 croissants and pastries. I was hoping to improve efficiency, but instead, I ended up with a frustrating, unreliable machine
Here are the major issues I encountered:
-Lack of Stability – The sheeter slides all over the place, making it nearly impossible to operate smoothly. I have to hold it down with one hand while cranking with the other, which defeats the purpose of a "time-saving" machine.
- Flawed Measurement Clips – The clips for thickness adjustments are a joke. Since they are separate pieces, they never align properly. When adjusting, one side might be at 3 while the other is at 4 causing uneven sheeting, so I always have to double-check both sides. This is a basic design flaw that shouldn't exist in a machine this expensive.
- Roller is Too Small – The tiny roller diameter makes it useless for properly rolling out laminated dough. If the dough isn’t fully chilled, it sticks, stretches, and ruins the final product. Rolling thinner than 0.5 cm? Forget about it—you’ll be left with torn, uneven sheets that require even more hand-rolling to fix.
-Slow & Inefficient Handle – The handle traction is slow, requiring way too many turns to get through a single sheet of dough.
A Few Positives: The compact size is convenient for small kitchens.
It can be use for fondant, pie crust or pasta with good results but won't recommend 100% for laminated doughs.
This is definitely NOT a machine you need to make better pastries. It only slightly helps the process if you're making 10 or fewer croissants per batch—but even then, you’ll still need to roll by hand to get the desired results.
At this price point, I expected something functional and well-designed, but instead, I received an unstable, frustrating, and inefficient tool that barely improves my workflow. If you’re a professional baker or even a serious home baker, do yourself a favor and avoid this machine. I waited a long time to receive it, and honestly, it feels like a complete waste of money.
Perhaps the 15" model would be slightly better for larger batches, but judging by this design, I have zero confidence that it’s worth the cost.
Bottom line: This machine is NOT a necessity, NOT worth the price, and NOT recommended for serious pastry work.
Honestly, I can’t recommend this to anyone. Unless they drastically improve the design or significantly lower the price, this machine is just not worth it.
